Spring Salad with Spring Pea Mix 

My husband thinks something is wrong with me today! I decided to cook us a very fancy dish for our summer entree for dinner. Are you feeling well? he says. Funny funny… I replied! I thought it would be fun to let you in on my little cooking adventure, so here it goes.All the main ingrediants for the salad/entree.

Boiled a dozen eggs.

Squeezed fresh lemon to boil the shrimp in.

Boiled the shrimp with lemon rind and dill stems for 3 minutes.

Cut Yukon Potatoes into chunks.

Rinse hard boiled eggs, peel and cut into quarters. Set aside.

Whisked together yogurt, mustard, lemon juice, salt and pepper. Add hot potatoes,onion,celery,shrimp, eggs,and chopped dill. Fold gently until well combined.
Boil sugar snap peas and frozen peas for 2 minutes and drain. Whisk together white vinegar, olive oil, fresh lemon juice, salt, ground pepper; add peas and dill. Toss until well coated.
DRUM ROLL…THE FINAL PRODUCT…ARE YOU READY? HERE IT IS!

Here is the wonderful part of my adventure…the look on my husband’s face when I presented this to him. PRICELESS…………..
I said, Honey I present to you, Shrimp Salad with Spring Pea Mix and put it in his lap. He was flabbergasted! See its been a long time…sigh……

        Thanks for your offter on info – I appreciate that! I saw your post on Parrott Key Carribean Grill. It looks like a fun place and haven’t tried it in the past based on not so good reviews on TripAdvisor. In checking again it looks like the reviews are getting better. I think I’ll try it out. I also want to try the new restaurant (Fresh Catch Bistro) that just opened in March which used to be Anthonys on the Gulf. Glad to see some new restaurants coming to the area – tough to find really good restaurants! Previously we drove into Bonito Springs and found some good restaurants!

        • Well you won’t believe this…we moved down here with NO jobs etc!! Crazy huh?! Would I do it again…? Not without jobs first. It did all work out for us, and here we are:) I have not tried the new restaurant Fresh Catch because “In Season” just crazy traffic on the beach, so we stay away from that area. But we will be now venturing back out there now that alot of tourists have left. Parrot Key is just a laid back Carribbean atmosphere to have fun…not a fine dining restaurant. Can I suggest “Roadhouse” off of San Carlos if you are interested in a really good restaurant. My husband and I LOVE their Spaghetti Bolognese …oh my mouth is already watering just typing this:) but they have steaks, seafood etc. If you give it a try, let me know what you think.

          • Wow, first of all I can’t believe you moved without jobs … but good for you … you went where you wanted to be and it all worked out for you! We did eat at Roadhouse our last trip and we LOVED it! I had a veal dish (that tells you how much I loved it because normally I wouldn’t be able to tell you what I ordered 2 years ago lol). It is at the top of my list to go to next week. Thank you 🙂
